The Catering Carnival

Chef J David

Like everything else I know, I learned how to cook from my mother. I come from a big family, and every night my mother cooked flavorful meals in huge quantities. I started helping her cook for my nieces and nephews when I was 9 years old.

I pursued a career in music, but eventually found my way back to cooking. I enrolled in culinary school, where I learned the technical terms for things my mother had taught me years ago.

From there, I bounced back and forth between various 5 star restaurants in Los Angeles.

In 2015, I started my own food truck with my fiancé (The Carnival Truck). By the end of the year, we were booking more catering jobs than food truck jobs, and thus The Catering Carnival was born.

In addition to my catering services, I work as a private chef in my client's homes, cooking 3-5 course meals for their family and friends. I also offer meal delivery for my clients looking to eat healthy and lose weight, and offer in person training for individuals or groups.

Some of my more unique services include the ability to be on site and cook personalized menus (something I did for the Strongest Man in the World Hafthor Bjornsson's KFC Commercial in 2018), and the ability to offer cooking demonstrations for any number of people (something I have done for Macy's twice now - a cooking demonstration at their San Diego and  Costa Mesa for 40-50 guests). I was also approached by Buzzfeed to participate in their Little Tikes commercial for the popular food truck toy.

I always try to give my own flare to the meals I cook, and am always up for a challenge. I once had a catering event with a menu full of traditional Indian style cuisine. My client and their guests were thrilled with what they were served.

I am always open to opportunities, collaborations and special events. I look forward to cooking for you!

My second cooking demonstration for Macy's was in Costa Mesa. They had a last minute cancellation for a chef to teach at this event, so they called us up and we were able to squeeze them in.
The theme was Italian food. An appetizer, salad, pasta dish, and dessert.
I provided Macy’s with his recipes, which were then printed on recipe cards and given to everyone who attended. They followed along as I showed them how to do what I do.
Macy’s partnered with Second Harvest Food Bank Orange County for this event, and asked for canned food donations prior to the demonstration starting. Second Harvest Food Bank offers a free mobile pantry, provides groceries for seniors with low incomes, and provides free after school snacks for kids.
